Vitamins C and D in a single plant-based gel: UEW researcher awarded NCN grant

The food technology researcher received funding under the MINIATURA 10 scheme to investigate plant-based emulgels: structures combining a water-based gel with small oil droplets. These could help protect both water-soluble vitamin C and fat-soluble vitamin D within one product. He will examine how composition and structure affect vitamin stability. The preliminary research will inform further work on functional foods and new supplement formulations.

Joanna Radomska has been awarded the title of professor of social sciences in the discipline of management and quality sciences. Her research examines strategy implementation, operational risk and approaches that involve employees and other stakeholders in strategy development. She also contributes to GAMEHEARTS, an international project investigating the economic, social and cultural value of Europe’s video games sector, and serves as Associate Editor of the Journal of Strategy and Management.
