As many as 87% of residents and tourists do not know the region\u2019s local cuisine. The results were clear: 87% of tourists visiting Wroc\u0142aw are unaware of local dishes, and most people pay little attention to the origin of ingredients <\/strong>\u2013 price is what matters most. For Paulina Graczyk, a WUEB doctoral student researching sustainable culinary tourism and product certification, this was more than just a survey result. It was a call to act.<\/p>\n\n\n\n<p>This is precisely the starting point for this year\u2019s Academy of Climate, organised by members of the Green Team \u2013 the Centre for Sustainable Development and the Sustainability Office at WUEB, with doctoral students joining the initiative. The sixth edition, held on 18 November 2025, focused entirely on how to prevent food waste at every stage of a food product\u2019s life cycle \u2013 from production and transport to the moment it reaches a guest\u2019s plate<\/p>\n\n\n\n<p>The sixth edition, held on 18 November 2025, focused entirely on how not to waste food at any stage of the product life cycle \u2013 from production, through transport, to the guest\u2019s plate.<\/p>\n\n\n\n<p><strong>Lectures were led by experts addressing, among other topics:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>the impact of food production on the climate,<\/li>\n\n\n\n<li>culinary upcycling (creative use of \u201cleftovers\u201d),<\/li>\n\n\n\n<li>the potential of local products from Lower Silesia.<\/li>\n<\/ul>\n\n\n\n<p>In the workshop part, participants could see these ideas in practice. They prepared salads with local blue cheese and Wroc\u0142aw tofu, baked bread on site and served it with honey and freeze-dried redcurrants \u2013 one of the most local fruits of the region.<\/p>\n\n\n\n<p>T<strong>he Academy is not a one-off event. It is a living laboratory of sustainable gastronomy where academic research meets the kitchen, education and business.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading has-large-font-size\">Map of sustainable venues: 30 addresses reshaping the city<\/h2>\n\n\n\n<p><strong>The most tangible outcome of the research by Paulina Graczyk and her team is the Map of Sustainable Food Venues in Wroc\u0142aw.<\/strong> It is not a standard list of fashionable restaurants.<strong> It is a curated selection of 30 places that combine local flavours with a responsible approach to the environment and local communities.<\/strong><\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\" style=\"border-top-style:none;border-top-width:0px;border-right-style:none;border-right-width:0px;border-bottom-style:none;border-bottom-width:0px;border-left-color:var(--wp--preset--color--ast-global-color-1);border-left-width:4px;padding-top:0;padding-bottom:0\">\n<p class=\"has-medium-font-size\"><strong>\u201cWe have created a map of sustainable venues in Wroc\u0142aw. It is a step towards promoting not only local flavours, but also a sustainable lifestyle,\u201d emphasises Paulina Graczyk.<\/strong><\/p>\n<\/blockquote>\n\n\n\n<p><strong>The map focuses above all on smaller, less recognisable venues \u2013 places that rarely feature in popularity rankings, yet do essential groundwork. <\/strong>They work with local farmers, shorten supply chains and ensure that food is not wasted.<\/p>\n\n\n\n<p>A \u201csustainable venue\u201d in the team\u2019s understanding is not just about a fashionable \u201ceco\u201d label. <strong>The criteria draw on the 17 Sustainable Development Goals of the United Nations and cover, among others:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Responsible consumption and production (Goal 12)<\/li>\n\n\n\n<li>use of local and seasonal products,<\/li>\n\n\n\n<li>FIFO systems (\u201cfirst in, first out\u201d) in storage,<\/li>\n\n\n\n<li>use of apps such as foodsi to limit food waste,<\/li>\n\n\n\n<li>ecological packaging.<\/li>\n\n\n\n<li>Climate action (Goal 13)<\/li>\n\n\n\n<li>shortening delivery routes,<\/li>\n\n\n\n<li>efficient energy and water use,<\/li>\n\n\n\n<li>promoting plant-based cuisine.<\/li>\n\n\n\n<li>Sustainable cities and communities (Goal 11)<\/li>\n\n\n\n<li>preserving regional culinary traditions,<\/li>\n\n\n\n<li>supporting local initiatives,<\/li>\n\n\n\n<li>donating products to community events.<\/li>\n\n\n\n<li>Decent work and economic growth (Goal 8)<\/li>\n\n\n\n<li>cooperation with local suppliers,<\/li>\n\n\n\n<li>stable employment,<\/li>\n\n\n\n<li>including people after mental health crises or with disabilities in teams,<\/li>\n\n\n\n<li>adhering to FAIRTRADE principles.<\/li>\n<\/ul>\n\n\n\n<p>The map includes, among others, social enterprises, venues with fully plant-based menus, places that work with charities, and those that care for animals. The map is available at the Tourist Information Centre and on the city\u2019s website. The next step is an extended digital version, to which new venues will be able to apply based on clearly described criteria.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-large-font-size\">New habits and trends: alcohol-free choices, mountain herbs and early education<\/h2>\n\n\n\n<p>The project of building the region\u2019s culinary identity does not end with restaurants. <strong>Paulina Graczyk is also involved in promoting alcohol-free alternatives and culinary tourism products beyond the university walls.<\/strong><\/p>\n\n\n\n<p>In the <strong>\u201cKulinarny Wroc\u0142aw\u201d podcast she talks with Marta Szyma\u0144ska about alcohol-free drinks based on herbs collected in the Bardzkie Mountains<\/strong>. This is yet another example of how locality, health and responsibility can come together in a single glass.<\/p>\n\n\n\n<p><strong>During the Climate Academy, the \u201csober bar\u201d zone offered participants recipes for natural, alcohol-free drinks with herbs from Lower Silesia.<\/strong> The idea was not to imitate classic cocktails, but to shape a new social norm: that choosing not to drink alcohol is simply a choice, one that does not require explanation or social pressure.<\/p>\n\n\n\n<p>At the same time, the team points to systemic challenges. In Poland, the promotion of local food often falls to officials, and producers complain that certificates do not translate into real sales. In Italy, as shown by Paulina Graczyk\u2019s analyses, food consortia and nutrition education for children are the key. This model is inspiring, but in Lower Silesia it has to be adapted to local realities.<\/p>\n\n\n\n<p><strong>For this reason, the Climate Academy, the venues map, podcasts and workshops form one coherent message. Sustainable gastronomy is not a passing trend. It is a long-term shift in lifestyle that needs research, patient education and cooperation between the university, businesses, civil society organisations and residents.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading has-large-font-size\">What next?<\/h2>\n\n\n\n<p>The Map of Sustainable Food Venues in Wroc\u0142aw is only the beginning.
